  1. Dinner is not yet planned, but rather going out and Celebrating our 29th anniversary in the minnie apple. So most likely some good Italian or Mexican high cuisine.

  2. Not sure. We cook a lot of our dinners here in Rome (We have a kitchen in studio). I think it’s some sort of beef soup/stew, but don’t quote me on that.

Yeah, I know, it’s 5:15pm and I have no idea how I’m getting my next meal…

  3. Beef Stew. As a matter of fact I just put the beef in the crockpot with parsley, sage, rosemary and bay leaves (I usually use thyme, but I forgot to get some this week.) I’ll add the veggies this afternoon some time.

  4. Lots of stews! Happy anniversary, Iggy.

We cook by the gallons and eat the same thing all week until its gone (lots of kids). This week it’s spaghetti. Nothing fancy.

  5. Blessed anniversary, Iggy!

I have no idea what’s on the menu tonight. In our community, Saturday evenings are ‘pick-up’ nights, because Sisters are in ministry, so we all fend for ourselves when we can. I will be traveling though, to visit my Dad who has been battling bone cancer for well over two years, and it’s taking a terrible toll on him. After my meeting with our Lay Canossians (our tertiaries), I’ll make the six-hour drive, and scrounge around in my folks fridge when I get there. Blessed Saturday everyone! I’ll remember you all in my road-rosary 🙂

  6. Dining hall food. Meatless for me today because it’s Saturday…

I really miss real food and cooking. It kinda sucks, living on oatmeal, pop-tarts, and dining hall.

  7. Happy anniversary to Iggy, and happy birthday to Brent’s daughter!

I made spaghetti (drizzled with olive oil, salt+pepper), broccoli, and chicken. Chicken recipe: bought raw chicken tenders; dusted with flour; coated in egg/water mix; covered with a mix of bread crumbs, garlic, parsley, basil, oregano, rosemary, and sage; cooked on the stove (medium heat) in olive oil for two minutes on each side; finished in oven, roughly 7 minutes at 350 degrees. Goes well with white wine.

  8. Anna, that sounds like most of my dinners here in Rome. Except the chicken is probably a lot better there in DC. And you’re probably better at cooking…

  9. Hey, not to be off topic, but I just noticed that you haven’t had an article on the single life since November 9. Are you saving it for your annual column on why single Catholics should not feel abandoned and ignored?
